Jenna's Chicken Lasagna

1lb. ground Chicken
2 tbsp Butter
1 (12oz) box Lasagna
1 can diced Basil, Garlic, and Oregano Tomatoes
2 tbsp dry chopped Onions
2 tbsp dry minced Garlic
1 tbsp Basil
2 (6oz) cans Hunt's tomato paste
3/4 (8oz) stick Mozzarella Cheese
3/4 (8oz) stick Mild Cheddar Cheese
1/2 (8oz) Pepper Jack Cheese
1 3/4 cups Cottage Cheese
3 Cheese Blend (Kraft) Grated Parmesan, Romano, & Asiago Cheese, to sprinkle over top



Cook your noodles, drain, and set them aside. Be sure to rinse them with cold water and lay them out so that they do NOT touch. Use a large pot to brown the chicken with the butter. When the chicken is cooked through, add  tomatoes, onion, garlic, basil, & tomato paste. Cook until it is hot. Wet the bottom of your oven safe dish with a small amount of tomato sauce, cover with noodles and place ingredients in this order.
Over the bottom layer of noodles:
tomato sauce
cottage cheese
mozzarella cheese
cheddar cheese
2nd layer of noodles:
very small amount of tomato sauce
the rest of the cottage cheese
mozzarella cheese
cheddar cheese
pepper jack cheese
3rd layer of noodles:
the rest of the tomato sauce
4th layer of noodles:
The rest of the mozzarella, cheddar, and pepper jack cheese
sprinkle the Kraft grated cheese to coat the top!


Place the Lasagna in the oven at 375 degrees and let cook for 40 minutes.

Seasoned Potatoes & Ranch BBQ Chicken

POTATOES
1 tsp onion powder
1/2 tsp perfect pinch cajun
1 tsp galic powder
 2 pinches cayenne
1 tsp oregano
1/2 basil
1/2 tsp pepper
1/2 tsp salt
1 stick+ 3 tbsp butter
9/10 medium potatoes
salt to sprinkle

Slice potatoes (make sure that you clean them first) and put on large cookie sheet.  Melt butter and mix all dry ingredients in to the melted butter. Poor ingredients mixture over potatoes and hand mix to insure that the seasoning gets everywhere. Sprinkle with salt. Bake at 350 degrees for 10 minutes, increase tempature to 415 degrees and cook for 10 more minutes.

CHICKEN
3 chicken breast
1 c light buttermilk ranch dressing
1/4 c hickory smoke bbq sauce
large pinch cayenne
1 tsp onion powder
1tsp garlic powder
3 tbsp butter
sprinkle salt

Slice chicken into nuggets. Put in ziplock, wash and drain water from bag. Mix all ingredients in a medium bowl. Poor seasoning mixture in bag and shake around. Poor everything into skillet. Skillet should start at Med. High heat and cook for 10 minutes, stirring occasionally. Reduce heat to Med. Low heat and cook until chicken is cooked through.

Waffles

2 c flour
3 tsp baking powder
1/4 tsp salt
3 eggs, seperated
1 1/2 c milk (2%)
6 tbsp vegetable oil

Sift dry ingredients; add beaten egg yolks, milk, and oil. Mix until smooth. Fold in beaten egg whites. Spray waffle maker before every waffle. Cook waffle until is is slightly golden brown. Serve with syrup, honey, peanut butter, or whatever your family enjoys.

Peanut Butter & Buttermilk Cupcakes


2 3/4 c Sugar
3 c Flour
2 tbsp Hot Water
1 tbsp Vanilla
4 beaten Eggs
2 sticks Butter
1 1/2 c Buttermilk
1 c Peanut Butter



Mix sugar, butter, & hot water. After well blended mix in the remaining ingredients.

This recipe will make 24 cupcakes and an 8x8 cake!

Jenna's Loaf (Jenna's Idea of Meat Loaf)

I'm not big on the whole ground beef with ketchup on it idea. I decided to come up with something of my own. It's delicous and super easy to make. I hope you enjoy it as much as I do.



Jenna's Loaf
1 lb. Turkey (ground)
1/2 lb. Jimmy Dean Hot Pork Sausage
1 egg
1 1/2 tsp cumin
2 1/2 tsp N' Orleans Cajun seasoning
1/3 cup Italian Bread Crumbs
1 tsp garlic powder
1 tsp onion powder
1/2 cup shredded parmesan, romano, and asiago cheese
1/3 cup shredded permesan, romano, and asiago cheese

Preheat oven to 370 degrees. Mix all dry ingredients, except cheese, in a bowl. Mix 1/4 cup of dry ingredients and 1/2 cup cheese. Mix in the egg and mix in remaining ingredients. Place your loaf in a loaf dish and sprinkle the top with French Fried Onions. Bake for 45 minutes or until cooked through.

Beef Stew & Garlic-Cheddar Biscuits

Beef Stew
2 1/2 lb. stew beef
1 (28oz) can contadina whole peeled tomatoes
2 beef bouillon cubes
1 1/2 tsp cumin
2 tsp onion powder
2 pinches cayenne
2 cups 100% vegetable juice cocktail (tomato)
2 cups beef broth
1 (.87oz) pack brown gravy mix
1 (1lb.) bag baby carrots

Mix all ingredients in crockpot. Put the crockpot on high for about 30 min. reduce to low and let cook for a couple hours before bed time. When it's time for bed set your crockpot to "keep warm". When you get up in the morning set to low and let cook until lunch.


Nana's Garlic-Cheddar Biscuits
2 cuos self-rising flour
3/4 cup buttermilk
1/3 cup shortening
1/2 cup sharp cheddar cheese
1 cup sharp cheddar cheese

topping:
1/3 stick margarine
1/2 tsp basil
1/2 tsp garlic powder
1/4 tsp salt

Mix flour, buttermilk, shortening, and garlic powder until well blended and then mix in cheese. Melt margarine, basil, garlic powder, and salt in a sepereate bowl. Bake at 350 degrees for 25-30 minutes. After taking buscuits out of the oven, brush on margarine mixture, and serve.

Jerzday at The Jordan's

At our house we make it a routine to watch Jersey Shore every Thursday. We decided that we would make ourselves an awesome grilled meal to go with our  Jerzday date night. We had bacon wrapped sausage dogs, barbecued ribs, asparagus, and zucchini.

Bacon wrapped Sausage Dogs:
3 Hillshire Farm Cheddar Wurst smoked sausage w/ Wisconsin Cheese
6 Hickory Smoked Sliced Bacon
3 Honey Wheat Hot Dog Buns
Cheddar Cheese
Chili
Buttermilk Ranch
Stubb's Sweet Hickory Bourbon BBQ sauce
toothpicks

Wrap your sausage in 2 slices of bacon and hold the bacon in place with toothpicks. Grill until the  bacon is completely cooked. Place sausage on bun and dress to your liking.

BBQ Ribs:
1 Rack Ribs
Chipotle BBQ Sauce
Corky's Dry BBQ Rub
Bowl

Coat ribs with dry bbq rub and place in a bowl. Drinch with bbq sauce and let it sit in the refrigerator over night. Remove from fridge and grill until cooked thouroughly.

Vegetables:
1 Bunch Asparagus
3 Zucchini's
California Seasoning Blend (Kroger)
Tray

Slice zucchini and have it place on a tray along with your asparagus. Sprinkle the California seasoning blend over the vegetables. It doesn't matter how much you sprinkle but I add about a tablespoon. You may like a little more or a little less. Everyone is different. Grill until your vegetables are soft. Time varies for everything because you cannot get the heat of the charcoal exactly the same everytime.

Jenna's plate: Sausage dog dressed with Stubb's BBQ sauce and Buttermilk Ranch. Asparagus, Zucchini, and Ribs! The sausage dog was AMAZING!

 Matt's plate: Sausage dog dressed with chili and cheese with ribs.
