Jenna's Loaf (Jenna's Idea of Meat Loaf)

I'm not big on the whole ground beef with ketchup on it idea. I decided to come up with something of my own. It's delicous and super easy to make. I hope you enjoy it as much as I do.



Jenna's Loaf
1 lb. Turkey (ground)
1/2 lb. Jimmy Dean Hot Pork Sausage
1 egg
1 1/2 tsp cumin
2 1/2 tsp N' Orleans Cajun seasoning
1/3 cup Italian Bread Crumbs
1 tsp garlic powder
1 tsp onion powder
1/2 cup shredded parmesan, romano, and asiago cheese
1/3 cup shredded permesan, romano, and asiago cheese

Preheat oven to 370 degrees. Mix all dry ingredients, except cheese, in a bowl. Mix 1/4 cup of dry ingredients and 1/2 cup cheese. Mix in the egg and mix in remaining ingredients. Place your loaf in a loaf dish and sprinkle the top with French Fried Onions. Bake for 45 minutes or until cooked through.

Beef Stew & Garlic-Cheddar Biscuits

Beef Stew
2 1/2 lb. stew beef
1 (28oz) can contadina whole peeled tomatoes
2 beef bouillon cubes
1 1/2 tsp cumin
2 tsp onion powder
2 pinches cayenne
2 cups 100% vegetable juice cocktail (tomato)
2 cups beef broth
1 (.87oz) pack brown gravy mix
1 (1lb.) bag baby carrots

Mix all ingredients in crockpot. Put the crockpot on high for about 30 min. reduce to low and let cook for a couple hours before bed time. When it's time for bed set your crockpot to "keep warm". When you get up in the morning set to low and let cook until lunch.


Nana's Garlic-Cheddar Biscuits
2 cuos self-rising flour
3/4 cup buttermilk
1/3 cup shortening
1/2 cup sharp cheddar cheese
1 cup sharp cheddar cheese

topping:
1/3 stick margarine
1/2 tsp basil
1/2 tsp garlic powder
1/4 tsp salt

Mix flour, buttermilk, shortening, and garlic powder until well blended and then mix in cheese. Melt margarine, basil, garlic powder, and salt in a sepereate bowl. Bake at 350 degrees for 25-30 minutes. After taking buscuits out of the oven, brush on margarine mixture, and serve.

Jerzday at The Jordan's

At our house we make it a routine to watch Jersey Shore every Thursday. We decided that we would make ourselves an awesome grilled meal to go with our  Jerzday date night. We had bacon wrapped sausage dogs, barbecued ribs, asparagus, and zucchini.

Bacon wrapped Sausage Dogs:
3 Hillshire Farm Cheddar Wurst smoked sausage w/ Wisconsin Cheese
6 Hickory Smoked Sliced Bacon
3 Honey Wheat Hot Dog Buns
Cheddar Cheese
Chili
Buttermilk Ranch
Stubb's Sweet Hickory Bourbon BBQ sauce
toothpicks

Wrap your sausage in 2 slices of bacon and hold the bacon in place with toothpicks. Grill until the  bacon is completely cooked. Place sausage on bun and dress to your liking.

BBQ Ribs:
1 Rack Ribs
Chipotle BBQ Sauce
Corky's Dry BBQ Rub
Bowl

Coat ribs with dry bbq rub and place in a bowl. Drinch with bbq sauce and let it sit in the refrigerator over night. Remove from fridge and grill until cooked thouroughly.

Vegetables:
1 Bunch Asparagus
3 Zucchini's
California Seasoning Blend (Kroger)
Tray

Slice zucchini and have it place on a tray along with your asparagus. Sprinkle the California seasoning blend over the vegetables. It doesn't matter how much you sprinkle but I add about a tablespoon. You may like a little more or a little less. Everyone is different. Grill until your vegetables are soft. Time varies for everything because you cannot get the heat of the charcoal exactly the same everytime.

Jenna's plate: Sausage dog dressed with Stubb's BBQ sauce and Buttermilk Ranch. Asparagus, Zucchini, and Ribs! The sausage dog was AMAZING!

Chicken & Tomato Sauce

1/2 jar Ragu Sauteed Onion & Garlic Tomato Sauce
Elbow Pasta
3 Chicken Breast
2 Packs (dry) Ranch Mix (Kroger)
1/2 tsp Salt
1/2 tbsp Basil
1 tbsp Califoria Seasoning Blend (Kroger)


Extra Items Needed:
Baking Sheet
Knife
Tray
Measuring Spoons
Paper Towels

Preheat oven to 375 degrees. Cut Chicken into small chunks and wash with warm water. Pat dry with paper towels and set aside. Mix all the dry ingredients together on the tray. Roll the chicken in the dry ingredients and place it on your baking sheet. Put in the oven and cook for about 20 minutes. Remove from oven and place chicken in a saute pan with the tomato sauce. Cook until sauce is hot. Prepare pasta and serve tomato sauce and chicken over the past.

How we do leftovers

As you know, I made the Almond Bake Chicken with brown rice for lunch today. We took our leftover chicken and made some really amazing salads for dinner.

Romaine Lettuce
Leftover Chicken
Lite Ranch Dressing
Buffalo Sauce
Crackers

Jenna's Salad
I had cut up romaine lettuce with my shredded chicken on top. I dressed it with Lite Ranch dressing and had crackers on the side.


Matt's Salad
He had cut romaine lettuce with shredded chicken, dressed with Lite Ranch dressing and buffalo sauce.

Almond Bake Chicken

30ish Almonds
1cup Italian Bread Crumbs
1tbsp Celery Salt
1/2tbsp Oregano
1/2tbsp Basil
2 Large Chicken Breast
2 or 3 Eggs
about 1/2oz EVOO
Brown Rice (instant will work)

EXTRAS
paper towels
baking sheet
knife
food processor
measuring cups/spoons

Preheat the oven to 375 degrees. Blend the Almonds in your food processor until they have the same consistency as the bread crumbs. Poor onto a tray and mix in the Italian bread crumbs, celery salt, oregano, and basil. Slice your chicken into large chunks and rinse in your sink. Crack two eggs and mix in a bowl. Before dipping your chicken in the eggs make sure to dry them with paper towels. After dipping your chicken in the egg, roll it in your dry mixture until every piece is coated evenly. Place your coated chicken on a non-stick baking sheet and drizzle with extra virgin olive oil. Be sure that you put your baking sheet on the middle rack of your oven and cook for 25 minutes. When the chicken has about 15 minutes left to cook, start preparing your brown rice (as directed on box). It's simple, fun, healthy and delicious.

Blueberry Banana Smoothie

about 12 Blueberries
1 banana sliced
2 heaping spoons of Plain Yogurt

Combine all ingredients in a blender and blend. This is very simple, fun, filling and delicious.

Rasberry Jello Shots

1 large pack Rasberry Jello Mix
Rasberry Vodka

Boil 2 cups water and mix in to the jello powder. After you have combine the two and it is well blended, add 2 cups Rasberry Vodka and place in small cups. Put the cups in the refrigerator to mold into jello form. This will take about 2 or 3 hours. Serve and ENJOY! Please consume your alcohol responsibly!

Matt's Bacon Dogs

2 packs Hotdogs
16 slices of bacon

Toppers:
Whole Grain Buns
Chili
Cheddar Cheese
Mustard
Mayonaise
Ketchup
Relish

Wrap hotdogs in bacon and use toothpicks to hold in place. Grill until bacon is nice and crispy!

Jenna's Grilled BBQ Burgers

2.25lb. Hamburger Meat
1 Egg
1 tsp Celery Salt
1/4 tsp Cayenne Pepper
1 tsp Corky's Dry BBQ Rub
1/4 cup STUBB'S Hickory Bourbon BBQ Sauce
8 Slices Precooked Bacon
STUBB'S BBQ Sauce to coat burgers in before grilling

Cook 8 slices of bacon and chop into small pieces. Mix all ingredients and pat out burgers, roll burgers in BBQ sauce and let rest for about 30 minutes. Cook on a grill until cooked through.
