Chicken, Bacon, Tomato, and Cheese Pasta

All I have to say is dinner was amazing tonight!!

1/2 stick butter
2 chicken breast
italian bread crumbs
1/4 cup bacon, sliced
1/4 cup onion, diced
1 garlic clove, minced
1 can diced garlic & onion tomatoes
salt and pepper
1/2 jar Ragu classic alfredo cheese sauce
box of bowtie noodles

Roll your chicken in bread crumbs and place on top of the butter that you have sliced and placed along the bottom of the casserole dish. Add your bacon, onions, garlic, and tomatoes. Sprinkle with salt and pepper and cook at 350 degrees for 50 minutes. Cook noodles and drain. Mix with the Ragu. Slice up the chicken and spoon out the desired amount of chicken and tomatoes over the pasta.

This is so simple and taste so, so wonderful!! :):) AMAZING!!

Tilapia Fish Tacos

I used tilapia in my fish tacos and it has a very distinct fish taste, it may not be for everyone. If you don't really like the extra fishy taste you can substitute with Cod. This is a very simple and quick recipe that you can do for one of those busy night or maybe even a lunch.

4 pieces Tilapia
salt, pepper, chili powder
1/2 medium onion
1/4 cup jalapenos
1 medium/large tomato
1 lemon
flour tortillas
olive oil


This recipe will make about six tacos. First you need to dice your tomato, onion, and jalapenos and squeeze half the lemon over the mixture and sprinkle with salt, put aside in a bowl. Place the tilapia on a plate and squeeze half of your lemon over it and then sprinkle salt, pepper, and chili powder. Have your skillet that is lined with olive oil heating on the stove at a medium- low setting. Cook the tilapia for five minutes on each side. Heat your tortillas in the microwave for about a minute. Make tacos and serve! It's that simple!!

This is a very quick and delicious recipe and the guys will love it. Hope you ENJOY!! :):)

Whole Chicken with Carrots & Potatoes

I have never attempted to cook a whole chicken, so tonight, I figured I would go out on a limb and see if I could do it. Well guess what, I did! It was a very light and wonderful meal that the entire family can enjoy and not feel bad about eating.
1 whole chicken
1 bag Green Giant Fresh Klondike
Gourmet Petite Potatoes
1 medium onion
1 lemon
1 small bag baby carrots
1 box chicken broth
salt and pepper
olive oil

Start by lining a skillet with olive oil at medium heat. Brown the breast side of the chicken. Line a large casserole dish with aluminum foil and place chicken in the center. Cut lemon into two pieces and squeeze juice over chicken and place the lemon pieces inside the chicken. Next cut the onion into four pieces and stuff two inside the chicken and two outside the chicken. Poor in the chicken broth and arrange carrots and potatoes to fit perfectly. Sprinkle with desired amount of salt and pepper and place in oven for approximately two hours at 325 degrees.

I really enjoyed making this dish, and I hope that you will too. :) Having this blog and being able to share my recipes with everyone has become like a job to me. Spicy Bacon Burger w/ Mac & Cheese

Tonight is sweet and simple. Time with friends, a good burger, and mac and cheese.

Spicy Bacon Burger
1pk bacon
1 1/2 2.25lb ground beef
1 block pepper jack cheese, shredded
2 tbsp Tony Chachere's original seasoning

Cut bacon into small pieces and mix in with ground beef and Tony's. Make the meat mixture into 7 small bowls but leave some meat to cover the cheese. Shred the cheese and place in the center of the meat, then cover the cheese with the left over meat. Cook in skillet about 8 minutes on each side.

Mac & Cheese
2 c macaroni elbow noodles
2 cans Campbell's cheddar cheese
1lb block Velvetta cheddar cheese
1 stick butter
plain bread crumbs



Cook the macaroni noodles and drain. Put in oven safe dish and mix with the Campbell's cheese. slice up the butter and Velvetta cheese and place across the top of the noodles, butter first. Cook at 375 degrees for 15 minutes, remove, stir, and cover with bread crumbs.

Beef & Sausage Stuffed Shells

I absolutely love noodles, so I decided to experiment and make some stuffed. Usually you would stuff noodles with cheese but I decided to use ground beef and italian sausage and top it off with mozzarella cheese.
Beef & Sausage Stuffed Shells
Jumbo Shells (12oz box)
1 1/8lb. ground beef 73/27
4 links sweet italian sausage
1/2 medium onion
1 can Hunt's basil, garlic, and oregano tomatoes
1can Hunt's garlic and onion tomatoes
salt and pepper
mozzarella cheese, shredded

I started out by getting the noodles going on the stove, while browning the beef and sausage. After the meat was browned I put in the onions and tomatoes and let cook for about 10 minutes. Drain the noodles and put them on a large cookie sheet. Drain the meat, tomatoes, and onions and stuff in noodles. Sprinkle the desired amount of mozzarella cheese on top and bake at 375 degrees for 7 minutes.

Shrimp & Fresh Broccoli

Today Matthew has been in the bed sick but I figured I would do something simple for Kate and I to eat before we went to bed. We decided we were going to cook together, so she sat in her highchair and watched Mommy as I worked.

Seasoned Shrimp
15-16 frozen shrimp 41/60
about 1 Tbs Tony Chachere's original creole seasoning
5 Tbs Soy Sauce
Line skillet with olive oil and cook on medium
it will only take about 6 min at the most.

Broccoli
Wash
Cut off stim
Serve
(It's great dipped in Lite Caesar Dressing)

This is great for a lazy day and it taste wonderful.. :) You are not going to want to miss tomorrow. It's going to be EPIC!!! :)

Simple Weekends

My family and I had a weekend full of fun! My friends Amanda, Cory, Kat, and Bruce came over Saturday night to celebrate Amanda graduating from cosmetology school. Kat and Bruce brought there daughter Annabella, and Katelynn absolutely loved that. We decided to make fried drumsticks for everyone, and I made a sauce to toss them in. It is extremely simple and ANYONE can make it.

Sunday, Kat, Bruce, and Annabella spent the day with us, and we decided to make ice cream and watch movies. Kat and I went to the store and picked up some things to make our ice cream even better. You know, the good stuff, caramel, nuts, butterscotch syrup, chocolate hard shell, cherries, and whipped cream. While we made the ice cream the children played and by the time the ice cream was done they were absolutely exhausted, so we all sat down and ate some ice cream while watching The Social Network. Sadly I'm not the genius behind the ice cream recipe. It's Kat's family recipe but I just had to share it with everyone because it was so amazing! I, of course, asked if I could make the recipe public and thank God they approved. :)

The weekends recipes:
Fried Chicken Sauce
1 cup hot sauce
1/3 cup soy sauce
1/6 cup worcestershire sauce

Vanilla Ice Cream
Ice cream maker
ice
ice cream salt
4 eggs
2 1/2 cups sugar
1 qt whipping creme
1 tbsp vanilla
milk to the fill line after you
 incorporate the other ingredients

The ice and ice cream salt goes on the outside of the container the ice cream goes in. Once it stops spinning, your ice cream is ready! :)

Turkey & Veggie Soup

Matthew and I decided that we would make a soup for dinner tonight, so Katelynn and I went to the grocery store earlier today and picked up a few items. I tried to keep it on the healthy side, so instead of ground beef, we used ground turkey and a ton of veggies.

Make sure to have all of your ingredients out and ready before you start making your soup.

INGREDIENTS:
5 sticks of celery, diced
1/2 bag of baby carrots, diced
1 bag frozen whole kernal corn
3 cloves of garlic, minced
1 can chicken broth
2 cans Hunt's diced basil, garlic, & oregano tomatoes
3 cups Campbell's tomato juice
1 can dark red kindney beans, strained & rinsed
1 tbsp salt
1/2 tsp cayenne pepper
1/2 tsp black pepper
1 lb. 85/15 ground turkey

Celery and baby carrots should be cleaned, diced into small pieces, and put into a large pot. Add the corn, chicken broth, tomatoes, tomato juice, salt, cayenne pepper, and black pepper, the garlic should be minced. The beans should be strained, rinsed, and added to the pot as well. Brown the ground turkey in a skillet, strain, and add to the soup.Set the stove to a medium low heat, cover, and let cook for about two hours, stirring occasionally.

The Start of a New Adventure!

I have always loved the idea of cooking but didn't really start doing it until my husband, Matthew, and I got married. Now, I try and do my best to cook the best meals I can for him and our beautiful daughter, Katelynn.

So, if I could, I would revolve my life around cooking, but I have a family, and I'm a very busy mommy, so I can't do that. That's why I have started this blog, hoping to help mothers like myself who don't really have that much time to play around in the kitchen. I'm going to try and take a little bit of time from each week and show you some new recipes. Throughout my posts, I will be teaching you how to cook everyday, simple meals, desserts, casseroles, etc. that your family will absolutely go crazy over.

Cooking with Jenna is going to be awesome! I'll be posting recipes REALLY soon. :)
